What makes Grand Bayonne valuable

Bayonne was born here, where the Adour meets the Nive, six kilometres from the Atlantic. A Roman castrum of eight hectares settled on the site in the fifth century, with more than a kilometre of wall and some twenty towers. Three centuries of English rule made it an artillery port; the Château-Vieux was raised against the ancient rampart at the end of the twelfth century. Louis XIV then charged Vauban with making it impregnable. This layering of twenty centuries is not scenery: it is daily life for those who live here. You fetch your bread under the arcades of rue Port-Neuf, push open a chocolatier's door — chocolate has been worked here for more than four hundred years, before any other town in France — and Les Halles are three minutes away, on the bank of the Nive.

The buildings

Medieval and early-modern houses along cobbled lanes, half-timbered façades on the Nive, stone blocks behind. Volumes, exposed beams and ceiling heights no recent construction reproduces. Every property here is a one-off.

From the cathedral to the ramparts

The gothic cathedral of Sainte-Marie, largely rebuilt in the thirteenth century, was inscribed on the World Heritage list in 1998 as part of the Santiago pilgrim routes; its cloister adjoins it. The Château-Vieux closes the angle of the ancient rampart. To the west the Lachepaillet rampart runs to the Porte d'Espagne; to the east, five bridges cross the Nive to Petit Bayonne. We work street by street and building by building here: fifty metres apart, the light, the character and the protection regime are no longer the same.

You walk down to Les Halles as they open, come back up rue Port-Neuf under the arcades, and stop at the chocolatier.
